Pumpkin Soup - Recipe

Pumpkin Soup


-         ½ Pumpkin
-         3 pcs Sweet Potato/Yam (Kamote)
-         3 pcs Carrots
-         5 cups water
-         3 stalks Celery (chopped)
-         4 pcs Garlic (minced)
-         1 pc Onion (chopped)
-         Soup stock (chicken or beef)
-         Pepper, Salt and Olive Oil


-         Boil in water the Pumpkin, Sweet Potato and Carrots.
-         When cooked, using a Blender, mix them all together with the Celery, until puree.
-         Add in the soup stock (add less if you want your soup to be thick)
-         Sauté the Onions and Garlic in Olive Oil.
-         Add in the Puree.
-         Season with salt and pepper.

Note: Some restaurants would add some creamers to give the soup a richer taste. But in our family, we prefer it with fewer calories. ^__^
